Since we were snowed in this weekend, I took advantage of the situation and decided to do a little baking. I thought I would share a couple of my favorite Holiday recipes. Trust me I am not a cook or a baker so anything that I do in the kitchen is FAST and EASY!! Ayla, Brennan and Kaleb all helped at some point. Brennan mainly just liked to see how much candy he could sneak and eat without me seeing..lol.. We made a Chex Winter Mix, Choc and Peanut butter fudge, choc chip cookies, and oreo truffles. Tonight we are making sugar cookies for Santa! My all time favorite thing to make is a
" Chex Winter Mix"
4 cups of each cereal ( chex mix (corn, wheat, rice) and cheerios
1 bag of mini pretzels
1 large bag of M&M's
2 bags of white chocolate chips
3 tablespoons of oil
Mix Cereal, pretzels and m&m's in large bowl. Pour oil over white choc. chips and melt in microwave, usually takes around two minutes. Pour melted choc over cereal mixture and coat evenly. After mixture is coated, spread out on wax paper and let dry.
You can not go wrong with this recipe, it is so good and everyone LOVES IT!

Oreo Truffles
1 package of oreos
1 8oz brick of cream cheese (softened)
1 package of choc chips or almond bark (white or choc)
Crush oreos (in blender, food processor or with hammer). Set a little dish aside for the end of the recipe. Mix in cream cheese and then roll into balls. Melt chocolate in microwave or double boiler. Dip balls into choc and sprinkle left over oreos on top. Put in freezer for at least 20 or 30 minutes to get really chilled. Put in container and store in fridge.

Here is the easiest and BEST peanut butter fudge recipe EVER.
2 cups of sugar
1/2 milk
1 1/3 cup peanut butter
1 jar of marshmallow creme
In sauce pan bring sugar and milk to boil. Boil for 3 minutes. Mix in peanut butter and creme, pour into pan and let set up!
-----------------------------------------------------------------------------------------------
Rolo Pretzel turtle
1 package of square pretzels
1 package of rolos
1 bag pecans
Preheat over to 350. Place rolo on top of pretzel and put in oven for 3-5 minutes. Let rolo just begin to melt and then push pecan in middle. Sprinkle with powdered sugar. If you do not want or like pecans, you can put another pretzel on top of rolo instead!
See, I told you how easy these recipes are. Now I give you my permission to go and stuff yourself full of sugar, come on, you know you want to!!!!
Happy Baking everyone!!
